Nadiya cooks her own interpretation of the Bakewell Tart before visiting a family business making a local delicacy, oatcakes. She then travels to Hale in Greater Manchester to meet an artisan pickle maker.

Nadiya gathers wild Scottish spices with a forager to make a Scottish curry, visits an ancient watermill to grind flour to make spiced soda-bread and then creates a veggie haggis tart tatin.
